Pansies are distinguished by having 4 petals pointing upward and one pointing down & a well defined eye in the middle of the flower. The yellow or blue pansy has a delicate perfume scent which seems to be the strongest in the early morning and at dusk. The flowers and leaves are edible, and have been used to make syrup, flavored honey and salad. One of the earliest flowering plants, Pansy in French language means thought or remembrance. They grow 6-9 inches tall and make a perfect ground cover between taller plants. Pansies bloom in a variety of colors in the early Spring and through Summer.
